In this section,
I have compiled some of my favorite recipes that I would like to
share with you. I hope you will find some you might like and use.

Bread Recipes

Awesome Zucchini
Bread
|
|
1 1/3 cup of flour
1 cup of sugar
1/2 cup of unsweetened cocoa powder
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup of light sour cream
1 large egg
2 tbs. vegetable oil
2 tsp. vanilla extract
1 1/2 cups of lightly packed shredded zucchini
Preheat the oven to 400 degrees F (200 C). In a large bowl, stir
together the flour, sugar, cocoa, baking powder, baking soda, and
salt. In a small bowl mix the sour cream, egg, oil and vanilla. Add
the zucchini (don't over mix). Stir the sour cream mixture carefully
into the dry ingredients.
Fill each cup of a muffin pan three-fourths full with the batter.
Bake for 20 minutes.
The recipe doesn't say you need to grease the pans, but I always do
just in case!

Dilly Bread |
|
1 pkg. of dry yeast softened
in a 1/4 cup of warm water.
Combine:
1 cup of cottage cheese heated to luke warm
2 tbs. sugar
1 tbs. dried onion flakes (crushed a little)
1 tbs. soft butter (not margarine)
2 tsp. dill seed
1 tsp. salt
1/4 tsp. soda
1 egg
Now add to yeast and two (2) cups of flour. Mix well and let
rise until it's double in size. Knead down and form into a round
loaf. Then put on a greased tin (cookie sheet) or the like and let
rise. Bake at 350 degrees
for 40 minutes. When done brush with butter and sprinkle with salt
while warm.
Try it - you'll like it!!

Hopi Fried Bread |
2 cups of flour
2 tsp. baking powder
3/4 tsp. salt
1/2 cup of nonfat dry milk
warm water
1 cup of shorteningCombine
flour, baking powder, salt and dry milk. Add enough warm water to
make a dough softer than biscuit dough. In a heavy skillet, melt
shortening and heat to 375 degrees. Divide dough and roll each half
to into a ¼ inch thickness. Use a sharp knife to cut into 3 inch
pieces. Drop into hot shortening. Turn and cook on both sides until
golden brown. Serve with honey butter, jam or jelly. |

Squaw Bread |
2 cups of flour
3 tsp. baking powder
1 tsp. salt
1 cup of milk or waterCombine
flour, salt and baking powder. Add milk or water and stir all
together to make a moderately stiff dough. Turn out on a
lightly floured board and knead until it is well blended and smooth.
Pinch off pieces of dough and stretch to desired thickness.
Make a slit in the middle. Fry in deep hot shortening.
Serve immediately with honey butter, jam or jelly.
